In the first ten years after Angkor Wat was opened to the public people were actually encouraged to touch the engravings.  The oils and dirt caused the shiny black as seen here.  It should be noted that foreign visitors only started to visit Cambodia in recent years.  But even today, almost no engravings have protection from human hands.
